The CII (Confederation of Indian Industry) has calculated that the sectors of food processing have the essential of grabbing the attention of United States 33 billion of investment in ten years and produce employment of around 9 million person days. Many Schedule schemes has been implemented and formulated by the government to offer financial assistance for establishing and modernizing units of food processing, support for HRD and R&D, Infrastructure creation, in addition to other promotional measures to motivate the processed food sector growth. The food processing is a big sector that covers tasks such as horticulture, fisheries, agriculture, plantation and animal husbandry. It also consists of other industries that use inputs of agriculture for edible products manufacturing. The Indian government of Ministry of Food Processing denotes the following sections within the food processing industry such as grain processing, fruits, dairy and vegetables processing, fisheries, consumer foods consisting of beverages, packaged drinking water and packaged foods.
According to Fellows (1997) though the industry is big in size it is still a nascent stage in terms of country’s development of food produce and total agriculture only 2% is processed. The size of the industry has been calculated at United States $ 70 billion by the Ministry of Food Processing, Government of India. The food processing industry contributes to around 6.4% to India’s gross domestic product in 2003 and has a share of 6% in total industrial production.
